Waterman’s Lobster Co

So it’s a sunny Sunday in Sydney and I am off to catch-up with a couple of dear friends at a new Hamptons-style Lobster Roll spot in Potts Point. I love checking out new places.

We start with a refreshing Spritz to kick-off proceedings… It’s oh so lovely and very different to the normal Aperol Spritz I have been enjoying in Europe of late (You can see these in my review of Camogli).

The stone fruit flavours of the peach mixed with the floral notes of the Orgeat is balanced by the citrus bite of the lemon and then bursts into a refreshing dance with the sparkling wine for a refreshing summer drink.

School Prawns

The crunchy, buttery and succulent prawns pair nicely with a lovely creamy aioli sauce. The contrasts of textures is a treat and it is a nice light entrée to start proceedings and awaken the taste buds.

I love this roll because it’s all about the lobster… there is minimal interference with any other ingredients, so the rich succulent lobster is on full display for your taste buds. A true treat. They import the lobsters from the Northern Hemisphere so the flavour of cold climate lobster is a touch different to the WA Rock Lobsters I grew-up on (the meat of the American lobster is a tad sweeter and delicate).

Baby Cos Salad

The crunchy fresh cos lettuce is refreshing and chilled and is balanced with some crunchy buttery sourdough croutons and a rich oyster mayo which adds a saline streak to the salad.

We make an excellent choice. The Chablis is the perfect accompaniment to the lobster. It is simply a display of elegance, purity and harmonious grandeur on the palate. The notes of floral, apples and lemon dominate on the nose. On the palate the terrior of the wine is evident with the fruit flavours and acidity being balanced by a rocky, fresh, saline minerality. It’s a pure fresh wine with the right level of acidity and texture to pair with the lobster.

So ends a lovely afternoon indeed. We continue chatting and stop for a coffee next door before wandering off to enjoy the rest of the afternoon!
